Cranberry Squash
Ingredients:
1 acorn squash
1 c. pure maple syrup
3 T. butter
1 1/2 c. fresh cranberries
Instructions:
Prepare squash by cutting in half and scooping out seeds. Then place it in a baking dish cut side up that is filled with about 1/2 inch of water. In a small saucepan, melt the butter and add the syrup. Be careful not to burn it! Put the cranberries in and gently cook until the berries just begin to pop. Take off heat and pour into prepared squash. Cover baking dish with foil and bake at 350 degrees for 45 minutes or until squash is tender.
